Flour is generally thought to be fattening because it is the basic ingredient in so many very high-calorie foods like pizza, pies, cakes, etc. However, a quick glance at the flour chart below shows clearly that flour is not the culprit in these fattening foods.

A pancake made with cake flour and served with maple syrup made with the recipe in the left column, would contain only 200 calories, adding 1/2 cup of toasted okara to the pancake, would triple the size of the pancake, adding only 45 more calories to the meal.

Details of the challenge are as follows:

Awards

  • All contributors whose recipes are published will receive a hard-cover copy of the book.

  • If a photo is included and published, you will be given two hard-cover copies of the book, or one hard cover and two paper-back copies for friends or relatives.

  • The three persons who submit the recipes we like best (don't be offended if yours isn't one of those selected, because our taste buds are sometimes very strange) will be awarded 3 hard-cover editions, or one hard-cover and four paper-back copies.

  • The three persons whose narrative is the most interesting and compelling will be awarded 4 hard-cover editions, or one hard-cover and six paper-back copies.

    Submission requirements

  • All recipes must include the recipe author's name and comments about cooking with okara.

  • Recipes must be submitted using the form below.

  • Each recipe must include a detailed list of ingredients and cooking instructions.

  • All form fields must be completed.

  • Submissions must be accompanied by a short commentary about your feelings about, or experiences with, cooking or dieting with okara

  • Recipes must be originals from your own kitchen.

  • Photos of your creations will greatly enhance your submission and improve your chances of winning a book prize!
